Tuna and White Bean Salad |

Loaded with fiber and easy to make, it is perfect for lunch or side salad. I got this recipe from Crazy Plates Ingredients:
1 (19 ounce) can cannellini beans (white kidney beans) |
1 (7 1/2 ounce) can tuna, water packed, drained |
2 cups tomatoes, diced |
1/2 cup red onion, minced |
2 tablespoons basil, fresh, chopped (or mint leaves) |
1 tablespoon olive oil |
2 teaspoons red wine vinegar |
2 teaspoons lemon juice |
1 teaspoon sugar |
1 garlic, minced |
1/2 teaspoon dijon mustard |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. In a large bowl, combine beans, tuna, tomatoes, red onions and basil. Stir gently to avoid smashing the beans. 2. In a small bowl, whisk together olive oil, vinegar, lemon juice, sugar, garlic, mustard, salt and pepper. Pour dressing over salad and mix well. |
