A great way to get a complete meal on these hot days when you don't feel like cooking or eating hot foods. Ingredients:
2 (6 ounce) cans tuna |
1/3 cup shredded carrot |
1/4 cup chopped cucumber |
1/4 cup sliced radish |
1 tablespoon pickle relish |
2 tablespoons chopped green onions |
3 cups cooked pasta |
1/2 cup plain low-fat yogurt |
1/2 cup reduced-calorie mayonnaise |
1 teaspoon lemon pepper |
1 teaspoon lemon juice |
Directions:
1. Combine all salad ingredients except pasta, toss. Add pasta, toss again. Combine dressing ingredients, pour over salad, toss gently to mix. Cover and refrigerate several hours. |
