This tuna salad gets a nutritional A . Tastes very fresh. It is from Bon Appetit, 1999, only I added three more ounces of tuna. Ingredients:
9 ounces albacore tuna |
1/4 cup nonfat yogurt |
3 tablespoon low-fat mayonnaise |
1 teaspoon mustard |
2 tablespoons lemon juice |
1 teaspoon lemon peel |
1 cup chopped onion |
1 cup chopped celery |
1 cup cherry tomatoes |
1/2 cup chopped parsley |
15 ounces garbanzo beans |
Directions:
1. Mix yogurt, mayonnaise, mustard and lemon peel. 2. Put tuna in a large bowl and drizzle lemon juice over it. 3. Add yogurt dressing, vegetables and beans to tuna. Mix well. Refrigerate. |
