Tuesday Night Quick Salad |

Need a quick salad for a weeknight after getting home late from work? Try this! It's easy to vary. I served with a baked potato that I cooked in the microwave (and finished in the oven). Ingredients:
1 (5 ounce) package mixed salad greens |
1 pint cherry tomatoes, cut in half |
1/4 cup crumbled gorgonzola cheese |
1/4 cup olive oil |
1 tablespoon balsamic vinegar |
1 teaspoon lemon juice |
salt and ground black pepper to taste |
Directions:
1. Mix baby greens and tomatoes in a large bowl. Sprinkle with gorgonzola. In a small bowl, mix oil, vinegar, and lemon juice. Sprinkle in salt and pepper, and whisk until well blended. Pour dressing over the salad mixture, and toss to coat. |
