Truffle Risotto

Truffles have a rich flavor, so two are plenty for a delectable risotto.
Ingredients:
2 medium-sized truffles
1 oz butter
1/2 onion, finely chopped
1 rasher of bacon cut into strips
1 lb arborio rice
2 1/2 c chicken stock
salt & pepper
Directions:
1. Preheat the oven to 400.
2. Cut the truffles into very thin slices.
3. Heat the butter in a large pan and add the onion.
4. After the onion starts to cook, add the bacon and rice and cook for a minute.
5. Add the truffles and the stock and season with salt and pepper.
6. Transfer to an ovenproof dish.
7. Cook, covered, for 20 minutes.
8. Serve immediately.
