a true russian bread Ingredients:
4 cups rye flour |
3 cups all-purpose flour |
1 tsp. sugar |
2 tsp. salt |
2 cups all-brand cereal |
2 tbs. caraway seeds-crushed |
2 tsp. instant coffee powder |
2 tsp. onion powder |
1/2 tsp. fennel seeds-crushed |
2 (1/4 ounce) packages of active dry yeast |
2 1/2 cups water plus 1/2 cup water devided |
1/4 cup vinegar |
1/4 cup molasses |
1 ounce unsweetened chocolate |
1/4 cup butter |
1 tsp. cornstarch |
Directions:
1. combine flours. 2. in a large bowl,thouroughly mix 2 1/3 cups of flour mixture,sugar,salt,cereal,caraway seed,coffee powder,onion powder,fennel seed and undissolved yeast 3. in a sauce pan combine 2 1/2 cups of water,vinegar ,molasses, 4. choccolate and butter 5. heat liquid mixture over low heat till warm(120-130 deg.) 6. butter and chocolate doesn't have to be melted 7. slowly add liquid to dry ingredients and beat with a mixer for 2 minutes on high speed,scraping down sides of the bowl occasionally 8. add 1/2 cup more of flour and beat for 2 minutes more 9. stir in enough additional flour to make a soft dough 10. turn out on a lightly floured board and cover and let rest 15 minutes 11. knead dough until smooth and elastic(about 10-15 minutes)dough may be stickey 12. place dough in a well greased bowl and thur to grease all surfaces 13. cover and let raise until double in bulk 14. punch down and turn out on a floured board shape into two balls abour 5 around 15. place each ball in the middle of a well greased 8 round cake pan 16. cover and let rise until doubled in bulk 17. bake at 350 F. for 40-45 minutes 18. meanwile ,combine cornstarch with 1/2 cup of cold water,cook over mediym hear,stirring constantly,to a boil.boil for 1 minute,still stirring 19. as soon as bread is baked brush cornstarch over loafs and bake 2-3 minutes longer or until glaze is set. 20. remove from pans and cool on wire racks |
