This is a recipe I got from my dad. He entered it in a Chili Cook off and everyone loved it! I have changed it to use ground turkey (we don't eat a lot of red meat). You can tame it down if you want too, but it is great with a spoon full of sour cream to cut the heat a little.
Ingredients:
1 med onion
4 cloves garlic
1 tsp chili powder
1 tsp cumin
1 tblsp cholula hot sauce
1 beer – shiner bock preferred, mexican beer alternate
1 diced fire roasted red pepper
1 4oz. can of diced green chilis
1 6-ish oz can of chili verde
1 6-ish oz can of green chili salsa
1 5.5 to 6 oz can of snappy tom, can use spicy hot v8 is alternate
1 6-ish oz can chipotle chilis in adobo sauce – use two or three chilis minced with all adobo sauce
1 15 oz. can of black beans – drained
1 15 oz. can of pinto beans – drained
1 15 oz can of kidney beans – drained
2 15 oz cans of fire roasted diced tomatoes, 1 can and 1 can of diced tomatoes, or 2 cans of diced tomatoes alternate
1 15 oz can of diced tomatoes with green chilis
2 lbs. ground turkey (can use combo of other meats)
Directions:
1. Brown meat in skillet, drain
2. Combine remaining ingredients in large slow cooker and add browned meat.
3. Slow cook for 4 hrs minimum with lid, stirring occasionally
4. Makes 8 to 10 bowls
5. Top with shredded Cheddar and Jack cheese
6. Serve with:warm corn tortillas and butter and/or tortilla chips
7. Lots of Beer, Shiner Bock, Tecate, etc.
