This is my recipe and they pair well with all roasted meats.Side dish. Ingredients:
3 lbs russet potatoes |
1 pint buttermilk |
1 bunch fennel, sliced thin |
1 onion, sliced thin |
1/2 lb bacon, diced |
6 tablespoons butter |
8 ounces blue cheese |
salt |
pepper |
Directions:
1. cook and rice the potatoes. 2. add butter and whip until melted. 3. add buttermilk and whip until smooth. 4. carmelize onion and fennel and fold into potatoes. 5. saute bacon drain and add to potatoes. 6. fold in blue cheese. |
