This is a recipe I got from my neighbor and good friend, Trudy. When looking through her cookbook together, I asked her to pick out a recipe for me to make. This is what she picked. She calls it 'Paradise Park' coleslaw because it reminds her of the summer picnics with her good friends and family in Paradise Park. This is a yummy sweet and tangy coleslaw made without mayo. It will last in the frig for months. Thanks, Trudy!
Ingredients:
1 head cabbage, shredded
1 large onion, chopped
1 large carrot, grated
1 cup white vinegar
3/4 cup sugar
2 teaspoons salt
1/4 teaspoon pepper
1/2 teaspoon celery seed
1/2 cup oil
Directions:
1. Combine vegetables in a very large bowl.
2. In a saucepan, combine vinegar, sugar, salt, pepper, celery seed, and oil.
3. Bring to a gentle boil.
4. Boil for 5 minutes.
5. Pour hot mixture over vegetables and stir.
6. Let stand and cool.
7. Keep in refrigerator.
8. It will stay fresh and crisp for at least a month, if it lasts that long!
