Rainbow trout is very mild with a hint of a nut-like flavor. It has a firm texture with a fairly fine flake. Dress up your trout with this toasted pecan butter for on elegant touch. Ingredients:
18 oz (dressed) rainbow trout, cooked, net from 24 oz fresh
1/3 cup chopped pecans
2 tbsp. butter or margarine
Directions:
1. Preheat oven to 450'F.
2. Season trout inside and out with seafood seasoning or salt and pepper to taste.
3. Arrange in a shallow baking pan. Bake uncovered for 15 minutes or until fish flakes easily when tested with a fork.
4. Meanwhile, in a small skillet cook pecans in hot butter until lightly toasted, about 2 minutes.
5. Serve trout topped with pecan butter and chopped parsley. Serve with lemon wedges, if desired.
