~Fish~ Ingredients:
4 trout fillets |
salt and pepper |
1 clove garlic,chopped fine |
2 tablespoon olive oil |
8 oz clam juice |
1/2 cup white wine |
1 clove garlic |
1 teaspoon italian herb |
1/8 teaspoon saffron |
2 fresh tomatoes,peeled,seeded,chopped |
2 teaspoon cornstarch |
1 stick pure butter,melted |
few dashes of hot sauce |
Directions:
1. Salt and pepper the trout,in a glass dish. 2. Mix the Olive Oil and garlic ,rubbing this over fish. 3. Place in refrigerate overnight. 4. In pan,combine,clam juice,wine,garlic,herbs,saffron,and tomatoes. 5. Cook and reduce this by half. 6. Place in blender,and blend until smooth,add cornstarch,blend,then slowly add the butter,process until well combined. 7. Place sauce over heat and cook,stirring,until thickened slightly,add the hot sauce. 8. Place trout,skin side down on grill,cover,and cook for 10 mintues,or until flaked. 9. ~Serve with sauce~ |
