Tropically Spicy Banana Bread |

Heat Wave!: The Best of Chile Pepper Magazine Edited by Dave DeWitt and Nancy Gerlach. Serve with cinnamon coffee or a scoop of coconut ice cream. Makes 1 loaf. Ingredients:
2 cups all-purpose flour |
1 tsp baking powder |
1/2 tsp baking soda |
1/4 tsp salt |
3 tbs candied tamarind |
2 tbs candied ginger |
1 tsp lime zest |
1 1/2 tsp orange zest |
1 stick butter, softened |
1/4 cup brown sugar |
1/2 cup white sugar |
2 eggs, beaten |
1 1/4 cups mashed ripe bananas |
1/4 cup orange juice |
1/2 tsp vanilla |
1/2 tsp ground cinnamon |
1/2 tsp ground allspice |
3 tbs peppered tequila |
1/2 cup chopped walnuts |
Directions:
1. Preheat oven to 350 degrees. 2. Sift together the dry ingredients and set aside. Combine the candied fruits and mix with the lime and orange zest. 3. Cream the butter and the two sugars together and stir in the eggs. Add the bananas, orange juice, vanilla, cinnamon, allspice and tequila. Stir in the dry ingredients by hand, only enough to moisten all ingredients. Add the candied fruit mixture and nuts. 4. Pour into a greased loaf pan and bake for 50 to 60 minutes until golden brown. |
