If you can't make it to Tahiti tomorrow morning, just have one of these muffins instead. Ingredients:
2 cups all-purpose flour |
1/2 cup sugar |
2 tsp baking powder |
1/2 tsp baking soda |
1/2 tsp salt |
1/3 cup veg oil |
1/3 cup milk |
1 egg, slightly beaten |
the zest and juice of 1 large orange |
2 oz dried coconut |
2 oz chopped macadamia nuts |
1 ripe banana, mashed |
Directions:
1. Preheat oven to 325F. 2. Mix together the flour, sugar, baking powder, baking soda and salt with a whisk. 3. Mix in the coconut and nuts. 4. Add the oil, milk, egg, orange (zest, then juice) and banana. 5. Stir just until the dry mixture has absorbed the liquids. 6. Line muffin tin with cupcake papers, or grease and flour the compartments. 7. Divide batter equally between the cups (each should be about 2/3 full). 8. Bake for 20 minutes. Do not open the oven door during baking. 9. Check by inserting toothpick into center of muffin. If itcomes out clean the muffins are done. |
