Use this on any vegetable, fruit or meat salad you want to give a tropical boost to Ingredients:
1 english long, seedless finely chopped |
1 pound mango, pitted, peeled and pureed |
2 teaspoons fresh grated or minced ginger |
1 1/2 teaspoons minced or pressed garlic |
3/4 teaspoon salt |
2 tablespoons rum |
2 teaspoons grated orange zest |
6 tablespoons fresh orange juice |
1/2 teaspoon dried red pepper flakes or 1/2 teaspoons minced fresh chile pepper |
2 teaspoons fresh thyme, minced or 1/2 teaspoon dried thyme |
1/4 cup vegetable oil |
Directions:
1. In a medium bowl, whisk together the mango puree, ginger, garlic, salt, rum, orange zest orange juice, chile, thyme and vegetable oil; stir in the cucumber. 2. Taste the vinaigrette for seasoning and chill until needed. |
