From King Arthur Flour. You can substitute walnuts or pecans for the Macadamia nuts. Note coconut milk powder is available . Ingredients:
1/2 cup milk, lukewarm |
2 large eggs |
4 tablespoons butter, softened |
3 cups all-purpose flour |
1/2 cup coconut milk powder |
2 teaspoons instant yeast |
2 tablespoons sugar |
1 teaspoon salt |
1/4 teaspoon coconut flavoring |
1/2 cup dried apricot, diced |
1/2 cup dried pineapple, diced |
1/2 cup unsweetened coconut |
1/2 cup macadamia nuts, diced |
Directions:
1. Combine all the ingredients, except fruit and nut, and mix and knead them together by hand, mixer or bread machine till you have made a soft, shiny dough. Knead in the fruit and nuts, then form the dough into a ball. Place in greased bowl, cover and allow to rise for 1 1/2 hours, till it's puffy. 2. Turn the dough onto a greased or floured surface and form into a ball. Place it smooth side up in a greased brioche mold or 1 qt (or larger) souffle pan. Let the loaf rise for about 1 1/2 hours, till it's crowed about 1 over the rim of the pan. 3. Bake the bread in a preheated 350 degreee oven for 30-35 minutes, until deeply browned. Remove from oven, and leave in pan to cool for about 10 minutes before turning out onto a rack to cool completely. Dust with confectioners sugar before serving. 4. Variations - Divide dough into 4 pieces, place in mini brioche molds and bake for about 25-30 minutes. |
