Tropical Sweet Potato Casserole |

Ingredients:
4 pounds sweet potatoes, peeled and cubed |
1 cup mashed banana |
1 cup firmly packed brown sugar |
1/2 cup canned coconut milk |
1 (8-ounce) can crushed pineapple in juice, drained |
1/8 teaspoon salt |
cooking spray |
1 1/2 tablespoons flaked coconut |
Directions:
1. Place sweet potato in a large saucepan; cover with water. Bring to a boil; cook 20 minutes or until tender. Drain well; return sweet potato to pan. Beat at medium speed of a mixer until smooth; add banana and next 4 ingredients, beating well. 2. Preheat oven to 350°. 3. Pour sweet potato mixture into an 11- x 7-inch baking dish coated with cooking spray. Sprinkle mixture with flaked coconut. Bake at 350° for 30 minutes or until thoroughly heated. |
