Tropical Stuffed Pork Roast |

I recently made a pork roast at a Make and Take place and loved it so I made up my own recipe to copy-cat it! It's a lovely flavor of slightly sweet with the juice meat. It's also very pretty and ridiculously easy to make. Enjoy! Ingredients:
4 lbs boneless pork loin roast |
2 tablespoons apricot preserves |
1/2 teaspoon thyme |
1/4 cup water |
1 1/2 cups prepared seasoned stuffing mix |
1/4 cup chicken broth |
1/3 cup dried cranberries (craisins) |
1 tablespoon chopped onion |
1/4 teaspoon salt |
1/2 teaspoon pepper |
2 tablespoons apricot preserves |
Directions:
1. Slice open pork roast and place in a roasting pan. 2. Open roast like a book. 3. Combine stuffing ingredients and spread across the roast. Close the roast. 4. Cominbe the apricot preserves and thyme. Spread over roast. 5. Pour 1/4 c water in roasting pan. 6. Bake at 350 for 1 hour and 40 minutes, or until the internal temperature reaches 145 degrees. |
