I have not tried this recipe. I'm posting this recipe for safe keeping. I got this recipe from Mr. Food's Quick And Easy Side Dishes. Note: this is like a squash souffle, so I recommend serving it right out of the oven. Ingredients:
12 ounces frozen butternut squash, thawed |
1/2 cup crushed pineapple, drained |
1/4 cup firmly packed brown sugar |
1/2 teaspoon ground cinnamon |
2 egg whites |
Directions:
1. Preheat the oven to 350. 2. Combine all the ingredients in a large bowl and pour into a 1-quart casserole dish that has been coated with nonstick vegetable spray. 3. Bake, covered, for 40-45 minutes, or until the center is set. |
