TROPICAL SOUP MADE WITH CHRISTIAN BROS. DRY SHERRY, COCONUT, MACADAMIA NUTS AND PEANUT BUTTER Ingredients:
1 large sweet onion chopped |
1/4 cup butter |
1 tablespoon -flour |
1 tablespoon -curry |
2 tablespoons flaked coconut |
2 quarts chicken broth |
1 cup smooth -peanut- butter |
1/4 cup christian bros ( or other brand) dry sherry |
1/2 cup sour cream |
chopped macadamias or peanuts |
Directions:
1. IN A 3 QUART SAUCE PAN SAUTE ONION IN BUTTER UNTIL LIMP. 2. STIR IN FLOUR, CURRY POWDER,COCONUT, AND 1 CUP OF THE CHICKEN BROTH. 3. BRING TO A BOIL; STIRRING CONSTANTLY. 4. POUR MIXTURE INTO THE BLENDER; ADD PEANUT BUTTER, BLEND UNTIL SMOOTH,RETURN MIXTURE TO SAUCEPAN. 5. ADD REMAINING CHICKEN BROTH AND SHERRY. 6. SIMMER 5 TO 10 MINUTES STIRRING UNTIL HOT DO NOT BOIL THIS...... 7. JUST BEFORE SERVING WHISK IN SOUR CREAM TO BLEND....... 8. SERVE WITH DUSTED CURRY POWDER ON TOP AND GARNISH WITH A DOLLOP OF SOUR CREAM AND ADD NUTS DONT STIR THIS . 9. MAKES 6 TO 8 SERVINGS |
