This pie is not quite as easy as some, but it is not hard either and is worth the trouble. Ingredients:
1/2 cup sugar |
5 tablespoons sugar |
1/8 teaspoon salt |
5 tablespoons flour |
1/4 cup cold milk |
1 1/2 cups scalded milk |
3 eggs (separated) |
1 1/2 cups shredded coconut |
1 (9 inch) baked pie crusts |
1 (8 ounce) can crushed pineapple, well drained |
1/4 teaspoon vanilla |
Directions:
1. Blend sugar, salt and flour with cold milk; stir in scalded milk. 2. Cook, stirring constantly over medium heat until thick and cooked through. 3. Add BEATEN egg yolks slowly, stirring in well. 4. Cook for 2 minutes. 5. Remove from heat and stir in 1/2 of the coconut. 6. COOL. 7. Stir drained pineapple into filling. 8. Pour into pie shell. 9. Beat egg whites till frothy. Gradually add remaining sugar and beat till stiff peaks. 10. Fold in remaining coconut and vanilla. 11. Place meringue over pie. 12. Bake at 325° for about 10 minutes or until meringue is browned. |
