tasty and filling hearty breakfast. can use other milks if desired. use only whole wheat pastry or white whole wheat flour. req ww flour is too dense. the riper the banana the better, adjust sugar according to banana's sweetness Ingredients:
1 banana |
1/2 cup sugar |
1 egg |
1 cup lite coconut milk |
1 1/2 cups soy milk |
1/2 cup grapefruit juice |
2 cups whole wheat pastry flour |
1/2 cup buckwheat flour |
1/4 cup wheat germ |
2 tbs apple cider vinegar |
1 1/2 tsp baking soda |
1 tsp baking powder |
1 tsp vanilla |
1 tsp cinnamon |
1/4 tsp nutmeg |
1/4 tsp allspice |
Directions:
1. mix wet ingredients first 2. add dry ingredients to wet 3. mix only until combined, batter will be lumpy 4. drop by 1/2 measure (or any size) on to hot grill 5. flip when top starts to look dry 6. I like to add raisins, nuts or other small fruits either fresh, dried or frozen |
