Tropical Noodle Toss With Crab and Mango

Ingredients:
1/2 cup chopped fresh mango
1 tablespoon diced shallot
1 tablespoon minced fresh ginger
1 tablespoon fresh lime juice
1 teaspoon sugar
1 teaspoon fish sauce
1 teaspoon sriracha sauce
1 bunch asparagus, cut into 3-inch pieces
1 (7 ounce) package fresh udon noodles or 1 (7 ounce) package soba noodles
3/4 cup cubed fresh mango
1/2 cup matchstick-cut carrot
1/4 cup thinly sliced shallot
1 cup lump crabmeat (8 oz.)
Directions:
1. Place dressing ingredients in a blender or food processor; process until mostly smooth; set aside.
2. Bring a large saucepan of water to a boil; add asparagus; simmer 2 minutes.
3. Add noodles to same pan with asparagus and gently break up noodles with a spoon; simmer 1-2 minutes.
4. Drain noodles and asparagus; rinse with cold water, and set aside.
5. Combine 3/4 Celsius cubed mango, carrots, and 1/4 cup shallots in a large bowl.
6. Add noodles and asparagus.
7. Drizzle with half the mango dressing; add crab, and toss gently to coat.
8. Add more dressing, if desired; taste for seasoning and adjust w/ salt and pepper, if desired.
9. Divide noodle mixture among 4 plates; serve immediately.
