Tropical Island Chicken Kabobs |

Ingredients:
2 lbs boneless skinless chicken breasts, cut into 1 inch pieces |
1/2 cup honey |
1/4 cup white wine vinegar |
5 teaspoons dijon mustard |
1 tablespoon ground ginger |
1 tablespoon chopped garlic |
1/2 teaspoon fresh ground pepper |
1 (15 ounce) can pineapple chunks, drained |
1/4 lb fresh snow pea |
8 ounces fresh mushrooms, stems removed |
2 large red bell peppers, cut into 1 inch pieces |
2 large red onions, cut into 1 inch pieces |

Directions:
1. Place chicken in large Ziploc bag and add next 6 ingredients. 2. Shake well and refrigerate 2 hours. 3. Remove chicken pieces from bag and place remaining marinade in small saucepan. 4. Bring marinade to a boil, reduce heat, and simmer 3 to 4 minutes. 5. Set aside. 6. Thread chicken and vegetables, alternating items, onto 8 (12-inch) skewers. 7. To prevent kabobs from sticking, spray grids of grill with a cooking spray while grids are cold. 8. Place skewers over hot coals. 9. Cook 8 to 10 minutes, turning frequently and basting with marinade. 10. Serves 8. |
