Don't know where the name came from, but it is interesting. I am guessing at the number of servings. Ingredients:
3 cups flour |
2 cups sugar |
1 teaspoon baking soda |
1 teaspoon salt |
1 tablespoon cinnamon |
1 1/2 cups oil |
3 eggs, beaten |
1 (8 ounce) can crushed pineapple (with juice) |
4 bananas, chopped (about 1/4 inch pieces) |
1 cup chopped pecans |
1 (8 ounce) package softened cream cheese |
1/4 cup softened butter |
1 lb confectioners' sugar |
1/2 cup coconut |
1/2 cup chopped pecans |
1 teaspoon vanilla |
Directions:
1. Sift together flour, sugar, soda, cinnamon, and salt. 2. Stir in oil and eggs. 3. Add remaining ingredients and pour into a greased and floured 10-inch tube pan. 4. Bake at 350 degrees for 1 hour or until tests done. 5. Cool completely before frosting. 6. For Frosting: Combine all ingredients and frost cake. 7. Keep covered and refrigerated. |
