Tropical Grilled Mango & Shrimp Skewers |

Mango Dessert, Main dish and now an appetizer with Mango in the supporting role...still can't enough of it :) Ingredients:
1 lb jumbo shrimp,peeled and deveined |
2 ripe mangoes, chopped into chunks |
1 red onion, chopped into large chunks |
salt to taste |
for the marinade |
2-3 thai bird eye chili, minced (or as much/little as you wish, replace with jalapenos if you want) |
1/2 cup orange juice |
1/2 cup fresh lime juice |
1tbsp dark brown sugar |
2 tablespoons fresh ginger, finely grated |
1 1/2 teaspoons cornstarch |
coconut oil |
lime wedges to garnish |
Directions:
1. Mix all ingredients of the marinade together. Add shrimp. Coat evenly. Refrigerate for 5 mins. Add salt once it's removed from the fridge then give it another mix. 2. Skewer the shrimp alternating with onions & mango on the skewers and grill for 5 minutes, turning once, until completely pink. 3. Serve hot with lime wedges....... |
