Tropical Greens with Orange Vinaigrette |

Ingredients:
1/4 cup flaked sweetened coconut |
1/4 cup sliced almonds |
1/4 cup orange juice |
3 tablespoons honey |
2 tablespoons lemon juice |
1 tablespoon cider vinegar |
1/4 teaspoon ground cumin |
1/4 teaspoon crushed red pepper |
1/8 teaspoon salt |
4 cups mixed salad greens |
1/2 small red onion, thinly sliced |
1 cup pineapple tidbits in juice, drained |
Directions:
1. Heat a large nonstick skillet over medium heat. Add coconut and almonds; cook 4 to 5 minutes or until golden, stirring constantly. Set aside. 2. Combine orange juice and next 6 ingredients in a small jar; cover and shake vigorously. 3. Combine mixed greens and onion, tossing gently. Arrange mixture on individual plates. Drizzle with orange juice mixture, and sprinkle with pineapple, almonds, and coconut. Serve immediately. |
