Tropical Fruit With Lemon Ginger Syrup |

A great tropical dessert Ingredients:
2 cups sugar |
1 cup water |
1 lemon, thinly sliced |
6 slices gingerroot, crushed |
3 whole star anise |
1 papaya |
1 mango, peeled and cut into cubes |
1 banana, peeled and sliced |
3 kiwi fruits, peeled and cut into wedges |
1 tablespoon chopped crystallized ginger |
vanilla ice cream |
Directions:
1. Combine syrup ingredients in a medium saucepan. 2. Cook over low heat, stirring occasionally, until sugar dissolves. 3. Simmer for 5 minutes longer to infuse flavors. 4. Let syrup cool, then strain and discard solids. 5. Chill until ready to use. 6. Peel papaya, cut in half, and scoop out seeds. Cut papaya into cubes and place in a large bowl with mango, banana, kiwi fruits, and ginger. 7. Drizzle about 1 cup of the syrup and stir gently to coat. 8. Serve chilled with a scoop of ice cream. |
