Tropical Fruit Salsa on Ice Cream (Or Other Places) |

To use the fruit of my yard. Ingredients:
1 pineapple, peeled and cored |
1 mango, peeled and cut off the pit |
1 papaya, peeled and seeds removed |
1 pint strawberry, stemmed (optional) |
1 small serrano chili, stemmed and seeded |
1 tablespoon brown sugar |
1 tablespoon fresh mint leaves, thinly sliced |
1 tablespoon passion fruit juice (or lime juice) |
Directions:
1. Cut pineapple, mango, papaya and strawberries in a small even dice. 2. Finely mince the Serrano chile. Toss the fruit and chile with the sugar. 3. Fold in the mint and juice to coat. 4. Chill until ready to serve. 5. Serve on top of ice cream. |
