Sweet pineapple, tender papaya and juicy mango create a fresh and fruity topping for toast, muffins and biscuits. It freezes well, so you can make several batches to store and use throughout the year. I have not tried this, just posting for safe keeping. Ingredients:

1 1/2 cups sugar |
1 1/2 cups peeled peeled cored crushed pineapple (1 med) |
1 1/2 cups peeled peeled seeded crushed papayas (2 med) |
1 cup peeled finely chopped mango (1 large) |
Directions:
1. In a large mixing bowl, combine freezer jam fruit pectin and sugar, stirring until evenly blended. Stir in pineapple, papaya and mango. Continue stirring for 3 minutes. 2. Ladle jam into clean 8-ounce Ball freezer jars, leaving 1/2 -inch headspace. Apply lids. Let stand until thickened, about 30 minutes. Label jars. Refrigerate jam for up to 3 weeks or freeze for up to 1 year. |
