1 (8 ounce) can crushed unsweetened pineapple, undrained |
3/4 cup nonfat milk, cold |
1/2 cup reduced-fat sour cream |
2 tablespoons diet lemon-lime soda |
2 drops coconut extract |
1 (1 ounce) package sugar-free instant vanilla pudding mix |
mixed fruit |
Directions:
1. In a blender or food processor, combine the first 6 ingredients; cover and process for 1 minute or until smooth. 2. Cover and refrigerate for at least 1 hour. 3. Serve with assorted fruit. |
