This is a wonderful concoction! It is a snap to make, and tastes just as delicious as it looks! Please make the effort to toast the coconut, it makes a big difference! Directions are included. This can be entirely ready in 15 minutes! This is great because you can serve it chilled, or if you're pressed for time, you can serve it immediately! Decorate the bowl with cute little parasols! Tip: One 6-oz container of Yoplait® Original 99% Fat Free Key lime pie yogurt makes a citrus stand-in for the vanilla yogurt! You can have your fruit and cookies, too! Dunk your favorite fruit or low-fat cookies into this tasty, tropical dip. Ingredients:
1 cup yoplait 99% fat free creamy vanilla yogurt (from 2-lb container) |
1/4 cup flaked coconut, toasted if desired |
1 (8 ounce) can crushed pineapple in juice, drained |
2 tablespoons packed brown sugar |
2 nectarines, sliced |
16 strawberries |
8 small bunch grapes |
16 gingersnaps or 16 graham cracker squares |
Directions:
1. In small bowl, mix yogurt, coconut, pineapple and brown sugar. 2. Serve dip immediately with fruit and gingersnaps, or cover and refrigerate at least 1 hour. 3. *To toast coconut, sprinkle in ungreased heavy skillet. Cook over medium-low heat 6 to 14 minutes, stirring frequently until browning begins, then stirring constantly until golden brown. |
