Tropical Curried Egg Salad Wraps |

A few years back I concocted this recipe for a party and wrapped the salad in lettuce lined sun dried tomato flat bread and then cut it into pinwheels sections. Use the salad for a filling for sandwiches or by itself, appetizers etc. Read more . And if you wish to leave out things like certain seeds, that's fine too Ingredients:
1 dozen eggs, hard boiled |
2 stalks celery fine diced |
3 tbs. sweet red or white onion fine diced |
3 dried pineapple rings fine chopped |
3 pieces dried mango or papaya fine diced |
1/2 cup dark raisins |
1/2 cup cashews coarse chopped |
1/4 cup raw green pumpkin seeds |
1/4 cup roasted sunflower seeds |
mayonnaise to bind |
dashes of hot sauce to taste |
curry powder to taste |
salt and pepper to taste |
Directions:
1. Mix all together and chill well. 2. Use in sandwich wrap fillings, scooped in lettuce cups , fill hollowed out ripe tomatoes. 3. The taste and textures are pleasing. 4. Chopped red apples are also a nice addition as well as chopped fresh herbs such as cilantro or parsley to taste. |
