Bananas substitute for most of the eggs, applesauce for the oil. These are a little more dense and springy, but easier on the calories and have great flavor! I use the Chocolate Buttercream Frosting and top with toasted coconut - YUMMY! Ingredients:
3/4 cup cocoa powder |
3/4 cup boiling water |
1 cup buttermilk |
1/4 cup canola oil |
3/4 cup applesauce |
1 large egg |
2 small bananas |
1 teaspoon coconut extract |
2 cups sugar |
2 cups flour |
1/2 teaspoon salt |
2 teaspoons baking soda |
Directions:
1. Mix cocoa and boiling water. 2. Mix buttermilk, oil, applesauce, eggs, banana and coconut extract. 3. Mix dry ingredients. 4. Combine dry ingredients with batter . 5. Mix in cocoa. 6. Bake at 350° for 25-30 minutes. |
