Tropical Chicken Salad With Orange Vinaigrette |

This is a weight watchers recipe. Ingredients:
2 tablespoons orange juice |
1 tablespoon rice wine vinegar |
2 teaspoons olive oil |
1/4 teaspoon table salt |
1/4 teaspoon black pepper, freshly ground |
4 cups mixed baby greens |
5 ounces cooked chicken breasts, skinless boneless |
3/4 cup pineapple chunk, fresh, cut into chunks |
1 mango, fresh, cut into chunks |
1/2 cucumber, seedless, cut into chunks |
1/4 cup mint leaf, fresh, cut into thin strips |
1/4 cup red onion, thinly sliced |
Directions:
1. In a large bowl, stir together orange juice, vinegar, oil, salt and pepper until blended. 2. Add salad greens, chicken, pineapple, mango, cucumber, mint and onion; toss to mix and coat. Serve immediately. Yields about 3 cups per serving. |
