Joey's mom's recipe Ingredients:
2 cups flour |
4 eggs |
2 teaspoons baking powder |
2 cups sugar |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1 3/4 cups canola oil |
2 cups grated raw carrots |
1/2 teaspoon salt |
1/2 teaspoon allspice |
1/2 teaspoon nutmeg |
8 ounces crushed pineapple, drained |
Directions:
1. Preheat oven to 350 degrees. 2. Stir flour, baking powder, baking soda, and salt, and set aside. 3. Beat eggs slightly. 4. Gradually beat in sugar until thick and lemon-colored. 5. Stir in oil with rubber spatula. 6. Add remaining ingredients and mix well. 7. Pour into three 9'' floured pans. 8. Bake 55-60 minutes. |
