I got this recipe from a realtor advertisement. This cake is so light! I absolutely love it and so does my family and the guys at work.
Ingredients:
1 (16 ounce) yellow cake mix
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 (5 1/2 ounce) package instant vanilla pudding
1 cup cold milk
8 ounces cream cheese, softened
8 ounces cool whip
1 (20 ounce) can crushed pineapple
3/4 cup chopped pecans
1 cup shredded coconut
Directions:
1. Prepare cake according to directions in a 9x13 pan.
2. Chill well.
3. Blend pudding and milk.
4. Beat in cream cheese until smooth.
5. Fold in Cool Whip.
6. Spread mixture onto cake.
7. Top with pineapple, nuts and coconut.
8. Chill well.
9. Enjoy!
