Tropical Black Beans and Rice |

I haven't tried this yet, but it looks really good. It was adapted from a Weight Watcher's recipe. Ingredients:
1/2 cup red onion, chopped |
1/2 cup orange juice |
1/4 cup fresh lime juice |
2 tablespoons fresh cilantro, chopped |
1/4-1/2 teaspoon cayenne pepper |
1/2 medium red bell pepper, chopped |
1/2 medium green bell pepper, chopped |
1 medium mango, diced |
2 garlic cloves, minced |
15 ounces black beans, rinsed and drained |
3 cups cooked brown rice, kept hot |
Directions:
1. Coat a large nonstick skillet with cooking spray. 2. Add all ingredients except beans and rice. Cook, stirring occasionally, until peppers are crisp-tender, about 5 minutes. 3. Stir in beans. Cook until heated through, about 5 minutes. Serve over rice. |
