Tropical Bellinis (Champagne or Sparkling Water)

Can make the base ahead of time. Chill time included in prep time.
Ingredients:
32 ounces mango juice
1 cup sugar
1 lime, halved
1/4 cup packed fresh mint
1 (750 ml) bottle champagne or 2 1/2 cups chilled sparkling water, chilled
lime slices and mint (to garnish)
Directions:
1. Bring first 4 ingredients to a boil. Cook for 10 minutes. Cool. Remove and discard lime and mint. Thoroughly chill for at least 1 hour.
2. Stir in Champagne or sparkling water before serving.
3. Serve over ice and garnish, if desired.
