Shoot it's lime in the coconut or rum up, and merrily we roll along with boozy cloud nine, and it's all in a banana tropical fritter! Ingredients:

100 g/4 oz/1 cup desiccated (shredded) coconut |
2 bananas, mashed |
75 g/3 oz dark brown sugar |
finely grated rind of 1 lime |
30 ml/2 tbsp dark rum |
1.5 ml baking powder |
oil, for deep-frying |
fluffy boozy cream topping |
1 egg white |
300 ml double (heavy) cream |
15 ml/1 tbsp brandy, rum or sherry |
25 g/1 oz/2 tbsp light brown sugar |
Directions:
1. Tropical Banana Fritters 2. Reserve 25 g/1 oz of the coconut and put the remainder in a bowl with the mashed bananas, sugar, lime rind, rum and baking powder. 3. Mix thoroughly. Shape into small balls and roll in the remaining coconut. 4. Deep-fry in hot oil for about 3 minutes until golden brown. 5. Drain on kitchen paper (paper towels) and serve hot with Fluffy Boozy Cream Topping. 6. Fluffy Boozy Cream Topping 7. Whisk the egg white until stiff. 8.
