Triple Threat Guinness Cheese Spread

Three cheese blended with caraway and Guinness Stout. Really good spread on a hambuger. Makes a great sandwich when toasted open- face style, on a sturdy wheat bread and topped with a rasher or two of bacon.
Ingredients:
1/2 lb. of sharp cheedar cheese grated
2 ounces of blue cheese, cut up
3 ounces of cream cheese, cut up
1 teaspoon of caraway seeds
1 teaspoon of paprika
1/2 cup guinness (the other half is for the cook!)
Directions:
1. Combine cheddar cheese, blue and cream cheese in the bowl of the food processor.
2. Add caraway seeds, paprika and beer.
3. Blend until smooth.
4. Transfer to a crock or serving dish.
5. Serve at room temperature with crackers.
6. Alternately spread on grilled burgers or hot dogs.
7. Or spread on a thick slice of hearty wheat bread, and broil until bubbly, top with bacon and a slice of tomato for a knife and fork sandwich that can't be beat.

9. **Please note that the resident critic noted that the caraway and stout was very strongly flavored and perhaps this would be better made with a lighter Ale. Personally, I love the depth of the barley flavor and like it paired with the stronger cheese. It is up to you.
