Ingredients:
1/4 cup finely chopped red onion
2 tablespoons chopped fresh cilantro
1 tablespoon minced seeded jalapeƱo pepper
1 teaspoon grated lime rind
1 tablespoon fresh lime juice
2 teaspoons minced peeled fresh ginger
2 teaspoons vegetable oil
2 ripe red-skinned plums, pitted and diced
2 ripe green-skinned plums, pitted and diced
2 ripe purple or black-skinned plums, pitted and diced
Directions:
1. Combine all ingredients in a bowl; toss well. Let stand 30 minutes.
