Triple Orange Muffins

I make these when I have an abundance of oranges to use up. It uses three parts of the orange; the juice, the rind, and the flesh.
Ingredients:
90 g butter
2/3 cup caster sugar
1 egg
2 oranges
2 cups self-raising flour
1/2 cup milk
Directions:
1. Preheat oven to 200 degrees Celsius.
2. Cream butter and sugar until light and fluffy.
3. Add the egg and beat well.
4. Add 1 tablespoon of orange peel and the juice of one orange (about 1/3 cup) and mix.
5. Into another bowl, sift the self-raising flour.
6. Make a well in the centre and fold in the butter/orange mixture alternately with the milk. Stir until just combined.
7. Place one spoonful of mixture into the bottom of 12 muffins pans.
8. Cut up the flesh of one orange into small pieces. Divide equally among the muffin pans.
9. Top with another spoonful of mixture.
10. Bake for 20 minutes of until golden.
