I had an orange that needed using, so I came up with these muffins and at the last moment decided to addin some blueberries and threw together a glaze. I thought they turned out very nicely :)
Ingredients:
1/2 cup white sugar
1/4 cup margarine, melted
3/4 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1 pinch clove
1/2 cup milk
1 1/2 teaspoons pure vanilla extract
1 teaspoon baking powder
1 cup all-purpose flour
1 teaspoon orange zest
1/4 cup blueberries (fresh or unthawed frozen)
1/2 cup margarine, melted (divided)
2 teaspoons orange juice, fresh
1 teaspoon warm water
1/2-3/4 cup powdered sugar
Directions:
1. Preheat oven to 375 degrees F. Grease 6 muffin cups.
2. Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg, cinnamon and cloves in a large bowl.
3. Stir in the milk and vanilla, then mix in the baking powder and flour until just combined. Fold in orange zest and blueberries. Fill the prepared muffin cups about 2/3 full.
4. Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.
5. While muffins are baking, place 1/4 cup of melted margarine in a bowl.
6. In a separate bowl, mix together remaining butter and 1/4 cup of powdered sugar, warm water and orange juice. Should be a relatively thin glaze.
7. Remove muffins from their cups, dip each muffin in the melted margarine, then in the orange and powdered sugar glaze. Place on a wire rack and allow to dry for a few minutes.
8. Meanwhile, add a few more tablespoons of powdered sugar to the glaze and stir to combine into a thicker glaze. Dip muffins in glaze and allow to dry again. You may choose to repeat this step a third time or simply serve muffins warm or cooled. Enjoy!
