These bars have the most delicious filling-it's a perfect combination of creamy lemon and raisins. Don't like raisins? These bars could make you change your mind! Even better 2-3 days after baking. I think I got this recipe from Sunmaid Raisins. Ingredients:
2 cups raisins |
1 can sweetened condensed milk |
1 tbs grated lemon, rind of |
1 tbs lemon juice |
1 cup butter or margarine |
1 1/3 cups brown sugar, packed |
1 1/2 tsp vanilla |
2 1/2 cups quick-cooking oats |
1 1/2 cups chopped walnut |
1/2 tsp baking soda |
1/4 tsp salt |
Directions:
1. In a medium saucepan, combine raisins, milk, lemon zest and lemon juice. 2. Cook over medium heat, stirring constantly; just until the mixture starts to bubble. 3. Remove from heat. 4. Cool slightly; set aside. 5. Beat margarine, sugar& vanilla until smooth. 6. Stir in remaining ingredients. 7. Spread half of the oat mixture into bottom of a greased 9x13 pan and press firmly. 8. Spread raisin mixture over that to within 1/4 inch of sides. 9. Crumble the rest of the oat mixture over raisin filling; press lightly. 10. Bake 25 to 30 minutes at 375F degrees or until golden brown. 11. Cool and cut into bars. |
