Always a favorite of my family, given to me by a lady who knew how to cook . Ingredients:
2 cups raisins |
1 (14 ounce) can sweetened condensed milk |
1 tablespoon freshly grated lemon rind |
1 tablespoon fresh lemon juice |
1 cup butter or 1 cup margarine |
1 1/3 cups brown sugar, firmly packed |
1 1/2 teaspoons vanilla |
2 1/2 cups quick-cooking oats |
1 1/2 cups chopped walnuts |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
Directions:
1. In medium saucepan combine first four ingredients. 2. Cook over medium heat, stirring constantly; just until mix starts to bubble. 3. Remove from heat. 4. Cool slightly; set aside. 5. Beat margarine, sugar& vanilla until smooth. 6. Stir in remaining ingredients. 7. Spread half of the oat mixture into bottom of a greased 9x13 pan and press firmly. 8. Spread raisin mixture over surface within 1/4 inch of sides. 9. Crumble remaining half of oat mixture over top; pat lightly. 10. Bake 25 to 30 minutes at 375°F degrees or until golden brown. |
