When just a single or double dose of chocolate just won't do... Ingredients:
1/2 c. butter, softened |
3/4 c. sugar |
1/2 c. unsweetened cocoa powder |
1/4 c. dark brown sugar, packed |
1/2 tsp. baking soda |
1/8 tsp.salt |
1/8 tsp. black pepper |
1 egg |
2 tsp. vanilla |
1 1/3 c. flour |
chocolate ganache |
6 oz. bittersweet chocolate, chopped |
1/3 c. whipping cream |
Directions:
1. Prep time includes chill time 2. Preheat oven to 350 3. In a large bowl beat butter on high speed 30 seconds 4. Add sugars, cocoa, baking soda, salt and pepper 5. Beat until combined, scraping bowl occasionally 6. Beat in the egg and vanilla until combined 7. Gradually beat or stir in flour. 8. Divide dough in half 9. Shape each half into an 8 inch roll 10. Wrap each roll in was paper or plastic wrap 11. Chill 1 hour or freeze for 30 min. or until dough is firm enough to slice 12. Cut rolls into 1/4 in slices 13. Place 2 in apart on an ungreased cookie sheet 14. Bake about 8 minutes or until edges are firm 15. cool 1 minute, transfer to a wire rack, cool completely 16. for the ganache: 17. in a small microwave safe bowl, combine the bittersweet chocolate and whipping cream 18. microwave on high for 1 minute stir until smooth 19. let stand until slightly thickened 20. to assemble cookie stacks: 21. Spread about 1 tsp of the ganache on the bottom of a cookie 22. top with another cookie, bottom side down 23. spread the top of second cookie with another tsp. of ganache 24. top with a third cookie, bottom down 25. pipe or spread the remaining ganache on the tops of cookie stacks 26. Chill until ganache is set |
