Triple-Decker Chicken Clubs

Ingredients:
2/3 cup light mayonnaise (or salad dressing)
1/4 teaspoon black pepper
12 ounces cooked chicken breast strips, refrigerated, cooked, chopped
1 cup apple, cored, chopped
8 lettuce leaves
12 bread, wheat, whole, toasted
1 tomato, large, sliced
8 slices bacon, packaged cooked, ready-to serve
Directions:
1. In a large bowl, combine mayonnaise and pepper. Stir in chicken and apple. Place a lettuce leaf on 4 of the toasted bread slices. Top lettuce with tomato slices and bacon, then another slice of bread. Top with remaining lettuce; spoon chicken mixture on lettuce. Top with remaining bread slices.
2. For smaller sandwiches, use 8 slices bread and 4 lettuce leaves. assemble sandwiches as directed, omitting the middle layer of bread and lettuce.
