This is an incredible chowder that I got from one of my walking club buddies a little over 2 years ago. I love corn and I love chowder so I make this often. I love it and hope you do as well. Enjoy Ingredients:
1 cup loose pack frozen whole kernel corn |
1/4 cup chopped green or sweet red pepper |
1/4 cup water |
2 tablespoons chopped onion |
1 teaspoon instant chicken bouillon granules |
1/4 teaspoon freshly ground black pepper |
1 cup milk |
2 tablespoons yellow cornmeal |
1/4 cup chopped sliced dried beef or fully cooked ham |
2 tablespoons coarsely broken corn chips |
Directions:
1. In a medium saucepan stir together frozen corn, bell pepper, water, onion, bouillon and pepper. 2. Bring to boiling then reduce heat and cover and simmer 5 minutes and do not drain. 3. In small mixing bowl stir together milk and cornmeal then stir into saucepan. 4. Cook and stir until thickened and bubbly then cook and stir 1 minute more. 5. Stir in dried beef or ham and heat through. 6. To serve ladle chowder into individual bowls and garnish with corn chips. |
