Triple Chip Oatmeal Cookies |

These are soft oatmeal cookies that use up those extra chips you sometimes have hanging out in your cupboard. Ingredients:
1 cup butter, softened |
1 cup white sugar |
1 cup brown sugar, packed |
3 eggs |
1 teaspoon vanilla extract |
2 cups all-purpose flour |
1 teaspoon baking soda |
1 teaspoon salt |
3 cups old-fashioned oatmeal |
1 cup unsweetened coconut |
2/3 cup chocolate chips |
2/3 cup white chocolate chips |
2/3 cup butterscotch chips |
Directions:
1. Preheat oven to 350 degrees F. Cover cookie sheets with parchment paper. 2. In a medium bowl, cream together butter, white sugar and brown sugar. Beat in eggs one at a time, stir in vanilla. Combine flour, baking soda, salt; stir into creamed mixture. Mix in oats, coconut and chips. 3. Drop dough by large tablespoons (I use a small cookie scoop) onto prepared cookie sheets, 2 inches apart. Bake cookies for 14 minutes in preheated oven. Allow cookies to cool on baking sheet for a couple of minutes before removing to a wire rack to cool completely. |
