Better Homes and Gardens Ingredients:
6 cups coarsely chopped romaine lettuce |
3 cups quartered fresh strawberries |
1/2 cup fresh raspberry |
1/2 cup fresh blueberries |
1/4 cup cream of coconut |
2 tablespoons lemon juice |
1 tablespoon water |
1 tablespoon dijon mustard |
1/2 teaspoon ground ginger |
salt |
pepper |
1/4 cup sliced almonds, tossed |
Directions:
1. In a large bowl, toss together lettuce, strawberries, raspberries, blueberries. 2. If desired, cover and chill for up to 1 hour. 3. For the dressing: in a small bowl, whisk together cream of coconut, lemon juice, water, mustard, and ginger. 4. Season to taste with salt and pepper; if desired, cover and chill until ready to serve. 5. To serve, pour dressing over lettuce mixture; gently toss to coat. 6. Sprinkle with almonds. |
